4 Autumn plants To Get Excited About
My mum has always been an advocate of cooking with local and seasonal foods, and has inspired me to share with you some powerhouse fruit and veggies below.
Beetroot
As a great source of Folate, Potassium, Vitamin A and C, and Manganese; beetroot reduces inflammation in the body, prevents heart disease, lowers your blood pressure and boosts your immune system.
Butternut Squash
This vegetable makes me think of home (Dutch roots!), so I love the orange colour. Rich in Vitamin A + C, Magnesium, Calcium and Fibre; butternut squash is a great hydrator, good for your immunity, and excellent for your eye health.
Pears
I had to learn to like pears! Once I learnt they were a powerhouse of goodness, I found ways to integrate them into my day. Full of Vitamin C and K, Potassium and Copper, Provitamin A and Niacin. Pears have anti-inflammatory properties, linked to lower diabetes, and great for gut health due to the fibre content.
Wild Mushrooms
With a delicate and nutty taste, and their particular texture, mushrooms are so delicious! Mushrooms are a source of Fibre, Protein, Antioxidants, Vitamin D (if raised with UV light), Selenium, Copper, Thiamine and Magnesium. All these amazing nutrients mean that mushrooms help lower blood pressure and boost your immune system during the colder months.
